KALE - RED RUSSIAN
Brassica oleracea var Acephala
DIRECTIONS FOR SPROUTING To use kale seeds for sprouting or microgreens, first soak the seeds for 4-8 hours. They can be grown in a jar, sprouter, bag, tray, or on a saucer. You will need to rinse them 2-3 times each day and they will be edible in 5-7 days. Consume the sprouts when the shoots reach 2-5 cm long. Cut them for microgreens when they reach about 7-10 cm and have developed two cotyledons but not yet grown any true leaves. After that stage they begin to become bitter. Use the sprouts and microgreens in salads, sandwiches, pita, coleslaw, sauerkraut, in condiments, pesto, and as a garnish or make them into a juice drink.
KALE SPROUTS AND MICROGREENS CONTAIN:
VITAMINS; They are rich in the antioxidant vitamin A, rich in the B vitamins and also C,E, and vit K.
MINERALS: Boron, bromine, calcium, magnesium, molybdenum phosphorus, potassium, and very rich in sulphur.
ACTIONS: Kale sprouts and microgreens are rich in zeaxanthin and lutein antioxidant carotenoids, found to be effective in preventing and treating visual diseases such as night blindness, cataracts and macular degeneration. Lutein appears to be associated with protection from age related macular degeneration, the leading cause of age related blindness in older adults.
