Pachyrrhizus erosus
The Mexican Water Chestnut is also called Yam Bean
It is a tall perrenial vine with very attractive flowers.
The root is creamy white with a crisp texture that
resembles raw potato or pear. The flavor is sweet
and starchy, reminiscent of some apples or raw
green beans, and it is usually eaten raw, sometimes
with salt, lemon, or lime juice and chili powder. It is
also cooked in soups and stir-fried dishes or cut into
thin wedges and dipped in salsa. The above ground
parts are inedible and can be used to make a potent
insecticide called rotenone. It can be planted all year
round in the tropics but it is frost sensitive and can
only be planted after frosts have finished in other
areas. It will grow to 4m tall. Jicama is high in dietry
fibre and Jícama is very low in saturated fat,
cholesterol and sodium. It is also a good source of
potassium and Vitamin C
Soak seeds for 5-8 hours
before planting 2-2cm deep in well drained moist soil
