In the West it's not easy to find this variety of bunching onion that is called for in much of Chinese, Japanese and Korean cuisine. This hardy year-round vegetable is a perfect complement to Asian soups, stir-fries and salads. In Japan, the onion is often pickled. In China, you'll find them in rice and noodle dishes, or soups and stir-fries. These single-stemmed onions are planted as annuals and can grow thick and straight similar to a leek. Bunching onions can be harvested at a number of stages, depending on whether you're after the tender, early green shoots, or the mature, white flesh of the lower stem. Red Beard is a striking bunching onion 1.5 cm thick with a red stem to 30 cm, topped with green leaves.  It grows to 60 cm, is tender and well flavoured.

Bunching onions can be harvested at a number of stages, depending on whether you're after the tender, early green shoots, or the mature, white flesh of the lower stem. Red Beard is a striking bunching onion 1.5 cm thick with a red stem to 30 cm, topped with green leaves.  It grows to 60 cm, is tender and well flavoured.

The seeds can be direct sown or grown in trays for later sowing as seeedlings. They will perform their best in well enriched soil that is moist. They can be grown in part shade, though full sun is best. Apply liquid fertiliser monthly for best results. Germination can be erratic when the temperature goes above 15 C. try raising them in trays kept in a warm part of the fridge if you live in a hot area. These are ideal for Farmers Markets.
