Tetragonolobus purpurea

Winged beans are very widely grown in Asia and in America. Nearly all of the plant is edible. The pods are the most common part used but leaves and roots are often eaten. It has the flavour somewhat of asparagus. This plant is incredibly rich in protein (over 30%) and rich in oils. The roots are richer in protein than potatoes and have a nutty flavour. The seeds can be used for making flour and also roasted to make a coffe-like drink. The flowers can be used to colour rice dishes. The beans are best eaten at 3-5 cm but most often consumed at 15-20cm. The leaves and young shoots are used like spinach and the flowers and flowerbuds taste like mushrooms. This plant is a very strong nitrogen fixer and needs no fertiliser. The seeds are best soaked for 12-24 hrs prior to sowing or rubbing with sandpaper in order to aid germination.  The brilliant scarlet flowers make this plant look gorgeous when in flower

Plant the seed 2-3cm deep in very warm soil and keep the soil damp until well established. It is not suitable for temperate areas. Harvest begins around 60 days. In tropical areas, plant Oct-Jan and subtropical areas from Nov to Dec.
