Sorrel is a leafy erect plant that makes great microgreens. It has juicy stems and slightly arrowhead shaped leaves. The leaves when grown in shaded situations produce a slightly tart lemony flavour used extensively in European cuisine. Sorrel soup is delicious and the leaves can be used in salad mixes and cooked as one would cook spinach. It teams well with both mashed or boiled potatoes or with eel.  It is commonly used in cheesemaking to curdle the milk.
