Borage, once cultivated for culinary and medicinal uses, is today mainly used as an oilseed. The seed oil is desired as source of gamma-linolenic acid for which borage is the highest known plant-based source. Borage can be used as either a fresh vegetable or a dried herb. It has a cucumber like taste, is often used in salads or as a garnish. The flower has a honey-like taste and is one of the few truly blue-colored edible things. It is often used to decorate desserts. Although often used in soups, one of the better known German borage recipes is the Green Sauce and in Poland it is used to pickle gherkins .Naturopathic practitioners use borage for regulation of metabolism and the hormonal system, and consider it to be a good remedy for PMS and menopause symptoms. Borage is used as a companion plant which is said to protect or nurse legumes, spinach, b rassicas, and even strawberries. It is also said to be a good companion plant to tomatoes. It is very easy to grow just sprinkle seeds on some loose soil and keep moist. It self seeds readily i the garden. Sow after the last frost. It does not transplant well as a seedling.
