Sage is a small, woody, perennial plant that grows to a
height of about 75cm. The long oval, grey-green leaves
are velvety in texture and have a camphor-like taste
which is great used in stuffings, marinades and cooking.
It can also make yummy herbal teas, be used in vinegars
and in herb butters.The flowers are borne on tall spikes in
spring, and are coloured from red to purple. Sage tolerates
most climates with the exception of monsoonal tropics. In
areas of extreme heat or cold, the plants are best grown in
containers. They prefer a sunny, wind sheltered position,
that is well drained. If you are in an area that experiences
wet times, ensure your plants have good ventilation to
avoid mildew on the leaves. Good soil preparation will help
the sage to thrive, so adding 250g of lime or dolomite will do
wonders. Follow this by adding plenty of organic matter such
as compost and decayed animal manure. Good drainage is
crucial for sage plants, and so you may find it necessary to
raise the beds to at least 20 cm above the surrounding
garden level, or simply plant the sage in a garden pot, and
sit outside the kitchen. Sow the seeds in seed trays in late
autumn and spring. Plant out the seedlings into garden
when 10cm tall. When in the garden, give them a good
soaking once a week.
