MITSUBA

Cryptotaenia japonica

Mitsuba is an erect bunching plant that grows to 60-90 cm with stems which have leaves somewhat similar to celery or parsley with which it is sometimes compared in terms of flavour. The flavour is somewhat like a subtle blend of each. In Japan it is used in green salads, stir-fries, as a garnish on entrees, in sushi, in soups, and in simmered or steamed dishes. In Australia, Mitsuba is a new and unusual culinary herb, which is ready for culinary experimentation. It is rich in vitamin C and calcium and has a strong nutritional profile.

Plant the seeds direct or in pots in spring, through to autumn in temperate areas and in autumn to spring in tropical and subtropical areas. Avoid midsummer plantings in all areas. Plant 0.5 cm deep in rich moist soil. Plant seeds closely and thin to 20 cm apart. Use the thinnings in your kitchen. They love a diluted foliar spray of seaweed or fish emulsion. The plants are ready to pick at 50 days.
