The bulb can also be grated or finely sliced and added to make a delicious stir-fry. This is a very underated vegetable that should be more widely grown and cooked.

The bulb and stems of this variety are both purple, though the flesh of the vegetable is white and sweet. Slice bulbs up for salad when young, or cook like turnip. The bulb can also be grated or finely sliced and added to make a delicious stir-fry. This is a very underated vegetable that should be more widely grown and cooked.

Prepare soil well with matured manure and ample compost as they like a rich soil structure. Direct sow seed in clumps 15 to 20cm apart with approx 35cm between rows. Cover the seeds with more fine compost or a fine layer of vermiculite. Water in gently. Thin seedlings to the strongest specimen in each 20cm of row. As the stems develop, heap some straw mulch around their bases. This helps to stop the dirt from washing between the leaves. Harvest about 8 weeks, when the bulbs are around 5-7cm.

Do not let them over mature as they will go tough.
