Cilantro grows to 50 cm. It has been specially selected for the delicious flavour and aroma of the leaves. The leaves are variable in shape. All parts of the plant are edible.but the fresh leaves and the dried seeds are the parts most commonly used in cooking. Coriander roots have a deeper, more intense flavour than the leaves. They are used in a variety of Asian dishes. Coriander like many spices, contains antioxidants which can delay or prevent the spoilage of food seasoned with this spice. Chemicals derived from coriander leaves were found to have antibacterial activity against salmonella and juice from the plant has been traditionally used to combat acne. It has been documented as a traditional treatment for diabetes. Direct sow the seed in spring, summer or early autumn and space the plants about 20cm apart. Heat and long days will cause the plant to go to seed more quickly, so if you are growing for the leaves, try growing when the conditions are milder and not so hot.
