For a treat try them chipped like potato chips. The root can be stored in the refrigerator or in a cold place for long periods once harvested. The leaves can also be eaten like celery. Celeriac grows best during the cooler months.

Celeriac is a very undervalued vegetable in Australian culture.
White Alabaster is a variety of Celeriac that produces a delicious bulb to 10cm in diameter. It is used cooked in soups, stews, or raw in salads and grated or juiced. For a treat try them chipped like potato chips. The root can be stored in the refrigerator or in a cold place for long periods once harvested. The leaves can also be eaten like celery. Celeriac grows best during the cooler months of the year and tolerates cold temperatures better than celery does. Matures ready to harvest in 120-139 days. Sow in spring for autumn to winter harvest. It requires fertile soil in a sunny position. Plant the large seeds 1cm deep in damp, rich, well drained soil with lots of compost and keep damp until seedlings are established. Plant 20-30cm apart in rows 50-75cm apart. Sow in September to December in cool or temperate areas and from March to September in tropical and subtropical areas. Plants are ready to harvest in 90-120 days.
