Stevia has become very popular as a sugar substitute because it has no calories and is a low carbohydrate, low sugar, food additive. It can be 30-45 times sweeter than sugar. In Japan stevia is used in 40% of the sweetener market. The plant has a long history of medicinal use in Paraguay and Brazil. The leaves can be eaten fresh or to sweeten teas, foods, medicines and as a "sweet treat". The perrenial plant grows to 1m and the leaves 2-3 cm long. The seeds need to be grown in a soil mix of 50% humus and 50% forest mulch. Firm the soil down gently and press the seeds in the mix so they are flush with the surface and cover with 0.5 mm of mix. Water gently and cover with kitchenwrap. The soil needs to be kept at 22-30C with slightly warmer bottom temperature until the seedlings reach 6-8 leaves. At this stage they need to be accustomed to sunlight and planted in the garden about 30cm apart. Stevia needs special care if grown in cool areas.
