Tall Utah is a vigorous celery that grows to 75 cm with a compact centre and rich flavoursome leaves. The stalks are delicious eaten raw in salads and with dips and the leaves are great for soups and casseroles. It tolerate light frosts better than most and will continue to perform in cool weather. Tall Utah takes about 88 days to reah full maturity. This celery does very well planted in trenches and hilled for blanching. Sow the seeds very shallowly in deep rich soil and keep moist until harvest. Thin the plants to about 20cm apart in all directions and pick individual leaves or cut the whole plant. Alternatively plant in trenches 50cm apart with plants spaced 30-40cm apart. Planting should be done from September to December in Cool and Temperate areas and from March to September in Tropical and Subtropical areas.
