Indian curries and particularly favoured by vegetarians.
It compliments rich foods. It is considered to combat
flattulence associated with bean dishes. It has a flavour
somewhat like oregano and anise with an aroma very
close to that af thyme. Ajowan is highly prized for having
a wide range of herbal properties. Ajowan is an annual
herbal plant with profusely branched stems and leaves.
It grows 60-90cm tall and produces umbels of small
white flowers which produce large quantities of
aromatic seeds. The seeds are collected when the
plant dries off and stored for use in the kitchen.
Ajowan grows very well in most soils and is especially
valued for its ability to withstand dry conditions in
summer. It is frost tender so sow the seeds shallowly
in late spring and keep moist until established.
Protect the seedlings from weed competition until
mature. Space the plants 40-60 apart.
